alginic acid



  • A carbohydrate acid, E400, obtained from various seaweeds and used as a thickening and gelling agent in commercial ice cream and convenience foods. It is also supplied as the sodium salt, sodium alginate, E401, used mainly in ice cream, the potassium salt, E402, and the calcium salt, E404, which forms a much stiffer gel than the other salts. It is also available as an ester, propane 2-diol alginate, E405.
