• A common street food on margarita island, Venezuela, made from white corn meal, salt and water to form a soft moist dough. This can be deep-fried in small balls stuffed with cheese, meat, fish or beans, or formed into 2.5 cm thick patties and fried on an unoiled griddle until crusted on either side, then finished in the oven at 180°C for about 20 minutes until hollow. When hollow, they are served hot with butter or jam.
