  • A pudding made from semolina boiled until cooked in white wine and water (2:3, 120 g semolina per litre of liquid) sweetened and flavoured with sugar, orange juice and zest and lemon zest. Egg yolks are then mixed in off the heat followed by stiffly beaten egg whites, which are folded in. The whole is then baked in a mould in a bain-marie at 170°C for 1 hour, cooled slightly, demoulded and served with lemon juice-flavoured syrup and chopped pistachio nuts.
