Food

  • A hard, granular, semi-fat, sharp, grating cheese from the northwest. It is made from a mixture of skimmed and full cream milk, curdled with lactobacillus and scalded, and cast into large rounds (8 to 12 kg). It can be aged up to 2 years and becomes sharper with aging. The minimum fat content is 24 per cent of dry matter.
