  • A Ghanaian staple made from a maize meal dough which has been allowed to ferment for 2 to 3 days and is then boiled with water for about 20 minutes to make a very stiff cooked porridge. This is formed into tennis-ball-sized portions for serving. Sometimes equal parts of maize meal and grated cassava root are used.
