  • the fermenting of wine, usually white wine, in wooden barrels rather than stainless steel tanks. This adds a layer of complexity, texture and flavour to the wine and can dramatically change the taste of the wine. red wine is never totally fermented in wooden barrels because red wines must be fermented in contact with their grape skins and it is very difficult to push grape skins in and out of a barrel through the small bung-hole.
