  • A one-pot meal in which ingredients are added in order of cooking time but usually starting with onions and garlic fried in oil followed by water or stock then the ingredients which usually include meat or fish, vegetables, tomato paste, seasonings but always rice. Occasionally the rice is steamed in a colander rested over the simmering liquid in the pot and when cooked stirred into the stew.
