  • A freshwater fish, Leponis macrochirus, found in North America and farmed in the USA and Japan. Generally blue with dark blue gill covers and a firm moist flesh, weighing up to 0.5 kg. Usually shallow-fried or partly poached, skinned, battered and deep-fried.
