  • A distinctive, strong-flavoured, smooth, semi-hard cheese made from cows’ milk in Asturia, sometimes blue-veined and sometimes wrapped in leaves. Ripened for 5 to 6 months in limestone caverns. Contains 30 to 35 per cent water, 31 per cent fat and 28 to 30 per cent protein.
