• masculine A large (up to 50 kg) semi-hard cheese made from cows’ milk and matured from 3 to 5 months. The rind is grey with red streaks and has a powdery surface, and the paste is firm, full of bite and has a nutty flavour. It has been made for at least 2000 years and is protected by an Appellation d’Origine. Contains 44 per cent water, 26 per cent fat and 23 per cent protein.
