  • Scolymus cardunculus, a relative of the globe artichoke, which can grow to a height of 2 or more metres. The thick celery-like stems are blanched whilst growing in the autumn to reduce bitterness and used as a vegetable. They need long slow cooking. The leaves, roots and buds can also be used.
