  • A smooth, white, semi-hard cheese from the town of the same name, made with a mixture of cows’ milk and ewes’ or goats’ milk. and cast in a disc shape. The paste has no holes and no rind. It is delicately flavoured when young but develops a strong flavour after 3–4 weeks.
