  • feminine white wine with chopped shallots, thyme, bayleaf and mushroom trimmings reduced by two thirds, an amount of brown veal stock equal to the original wine added and all reduced by half, strained and finished with beurre maître d’hôtel and chopped tarragon. Used with red meat.
