  • A crumbly, mellow, slightly salty cows’ milk cheese which is matured from 1 to 15 months (farmhouse types usually for over 9 months) suitable for dessert or culinary use, manufactured in a similar way to Cheddar. There is a white variety and a red one coloured with annatto. It is the oldest known English cheese dating from at least Roman times.
