  • The usually dark blue to black crescent-shaped bivalve, Mytilus edulis, with orange flesh grown extensively around the Atlantic coast in unpolluted seawater. They are also found in the wild but these are suspect because of pollution. If they are purchased live, the shells should be tightly closed or close when tapped, and only those which open when heated should be used.
