  • Jointed rabbit browned in oil and lard or bacon fat, reserved; chopped onion browned in the same fat; chopped and crushed garlic, chopped celery and tomato concassée added and simmered, followed by dry white wine and the reserved rabbit; seasoned and all simmered until the rabbit is tender. Finished with chopped chervil or parsley.
