  • A yeasted, egg and sugar-enriched, strong flour dough (2 eggs per kg of flour) brought together with cold milk, layered with 0.6 times the weight of flour in butter, using the English puff pastry method with 3 threefold turns, resting between turns as usual. The pastry is rolled out to the appropriate thickness, garnished appropriately, proved and then baked at 230°C.
