  • Large cuts of fish or whole fish cooked in simmering court bouillon or acidulated and salted water until cooked. Cooking is finished when the flesh leaves the bone. Usually garnished with picked parsley, plain boiled potatoes, slices of blanched aromatic vegetables and a little cooking liquor and served separately with a suitable sauce.
