  • A seawater fish, Zeus taber, from the Mediterranean and the Bay of Biscay, famous for St Peter’s thumbprint (a large black spot ringed with yellow) behind both gill covers. The head takes up nearly half its length (up to 60 cm female, 45 cm male). The fish is a sandy colour tinged with yellow and blue and has a very fine-flavoured white flesh.
