  • A black pudding made with 2 parts blood to 1 part cream and 1 part breadcrumbs, seasoned and flavoured with tansy and other chopped herbs, filled into 4 cm casings, knotted and boiled for 20 or so minutes. The blood used depends on the supply. Sheep, pig, goose, turkey and hare blood have all been used. The original from Limerick uses sheep’s blood.
