  • A semi-hard soft cheese with irregularly-shaped holes ripened for 1 to 3 weeks. It is cast in 500 g to 1 kg bricks and has a mild piquant flavour and a thin yellow to orange coloured rind. Contains 50 per cent water, 23 per cent fat and 22 per cent protein.
