  • Ingredients in cookery which add flavour to a dish made principally from other ingredients. They can be of natural origin and add little bulk, such as herbs, spices, seasoning, extracts, essences, etc., or those which also add bulk, such as aromatic vegetables and meats. Others, particularly fruit flavours, are purely synthetic in origin. Processed and convenience foods generally contain mixtures of natural and synthetic flavours.
