  • A double-crust puff pastry tart filled with a corn flour thickened and sweetened custard made with prune soaking water, plum juice or the like, flavoured with port and lemon juice and with halved or whole fruit embedded in it. The top is glazed and the tart baked at 230°C for 15 minutes and then at 200°C for a further 15 minutes or until cooked. Called after the name of the fruit e.g. plum flory.
