  • sugar syrup boiled to 116 to 118°C, i.e. between the soft and hard ball stage, used when cooled as a basis for cake icing. It must be diluted with water and used at a precise temperature. If mixed with glycerine and gums it remains temporarily malleable at room temperature and may be rolled out for covering cakes and used to mould decorations.
