  • feminine A semi-hard blue-veined cows’ milk cheese from the Auvergne, ripened for 2 to 3 months and with a creamy texture and full-bodied flavour. It is cast in a tall cylinder shape and has a dark rind rather like Stilton. It has AOC status.
