  • A beef and vegetable broth made from cubed chuck steak (1:4 on water) and pieces of marrow bone simmered with a bouquet garni and onion clouté for 2 hours; skimmed; bouquet garni, marrow bone and onion clouté removed; marrow from bone added back and simmered with diced root vegetables and leeks for 30 minutes; garnished with small Spätzle dumplings
