  • The kernel of the fruit of the maidenhair tree, Ginkgo biloba. From East Asia but now grown around the Mediterranean. The flesh of the fruit is not edible but the nuts are used in Japanese cooking. May be roasted, used in sweet or savoury dishes or as a garnish or snack food.
