  • Finely minced beef and pork mixed with softened rusk, egg yolk, seasoning and a little paprika. Half of this placed in a greased oblong mould, slices of skinned tomatoes placed on top followed by the remainder of the forcemeat, topped with a mixture of French mustard, chopped onion and parsley and butter and baked in a 200°C oven for 1 hour to give a crisp crusty surface. Served from the dish.
