  • a former traditional winemaking technique in Italy, especially Tuscany, in which semi-dried must from a previous batch of winemaking was added to newly fermented wine to start the secondary fermentation process. This was useful in old, cold cellars but also produced softer wines with more alcohol and a richer colour, and sometimes with slight effervescence.
