  • A device installed in conjunction with a cooking exhaust system and employing grease-collecting baffles positioned so as to create apath of sharp turns through which the cooking exhaust is passed at high velocity. The grease, which is particulate and heavier than air, is collected on the baffles by centrifugal force, while the carrying air continues around the sharp turns on its way to being exhausted, thus becoming cleaner at each baffle.
