  • A sweetened custard made with milk, sugar and egg yolks (10:4:1), heated to coating consistency, softened gelatine (2 g per 100 ml) and ground blanched hazelnuts (40 g per 100 ml) added, cooled but not set, then a third of its volume of cream, whipped to a soft peak, folded into the mixture which is poured into moulds to set
