  • protein which has been broken down into smaller subunits (peptides) by treatment with water at high temperature and pressure or other hydrolysing agents. This produces highly flavoured compounds as in yeast and meat extracts and also occurs during fermentation of proteins (soya sauce, miso, tempeh, etc.) and to a limited extent when cooking proteins.
