  • A bacterium which grows on rice, usually found in temperate countries in spore form. The spore will germinate after cooking and lead to growth of the vegetative form which can cause food poisoning. There are 2 strains, one has an incubation period of 1 – 5 hours, a duration of 6 – 24 hours and the symptoms are nausea and vomiting and occasionally diarrhoea; the other has an incubation period of 8 – 16 hours, a duration of 12 – 24 hours and the symptoms are abdominal pain, diarrhoea and occasionally nausea.
