• Soft-fried noodles. udon noodles boiled in salted water until al dente, drained, refreshed, redrained and oiled, mixed in the frying pan with grated carrot, shredded Chinese cabbage and diced sweet pepper, which have all been fried in oil flavoured with chopped garlic and ginger, and all fried gently whilst being stirred. Seasoned and sprinkled with soya sauce before serving.
