  • Sardine balls made with fresh, skinned sardine fillets processed with miso, ginger and flour. These are poached in water until they rise then reserved, the cooking liquor strained, salted, flavoured with soya sauce, the cooked sardine balls and cooked turnip slices added and the soup served at once with a lemon peel garnish.
