  • Boned breast of veal covered with a stuffing containing minced beef and sausage with breadcrumbs soaked in milk, sweated chopped onion, parsley, nutmeg, lemon zest and seasoning bound with egg, rolled up, tied, browned in lard and braised in stock for about 2 hours. Served hot with the reduced cooking liquor thickened with beurre manié or cold with clarified and jellied cooking liquor.
