  • The thickened turnip-like lower stem of a member of the Brassica family, Brassica oleraceae (Gongylodes Group), from which the rather sparse leaves spring. It is generally green to red, and grows above ground. The flesh is crisp, has a mild flavour and is eaten raw or cooked. Popular in Germany.
