- A relatively simple dish by Indian standards of braised mutton. pieces of mutton are rubbed with a paste of shallots, garlic, cloves, coriander leaves, salt and a little butter, and fried in butter until dry. yoghurt and some basil leaves are added and the mixture is again stirred and boiled until dry, more butter, mace and chopped chives are added and the dish slowly cooked until well browned. A little water may be added to ensure that the meat is cooked through. Finally paprika is added and the dish finished in a slow oven for about 30 minutes.
