  • A soft cows’ milk cheese from Normandy cast in small discs (500 g) with a brownish shiny rind and a strong flavour and smell. It is protected by appellation d’origine status and the label should contain the words ‘Pays d’Auge’. Contains 51 per cent water, 20 per cent fat and 24 per cent protein.
