  • Some form of proteinase, often from papaya or pineapple, which in a water solution is used to break down the muscle fibres in meat. Care must be taken not to use for too long as the enzymes are not used up and the meat may be reduced to soft slush. The enzymes can be deactivated by heat or alcohol.
