    A soft pale spun curd cheese made from buffalo or cows’ milk eaten very fresh. Formed into a round or pear shape and often stored in brine. Used for pizzas, lasagne and in salads. It becomes characteristically stringy when cooked. Contains 55 to 65 per cent water, 18 to 20 per cent fat and 16 to 21 per cent protein.
