  • shavings of oak used as a low-cost alternative to storing wine in oak barrels, which are expensive. They are added to a vat of fermenting wine to provide some of the oak flavour to the wine. The wine will not have been aged in an oak barrel, so will not have the added complexity of flavour of this ageing process.
