  • The seed pod of a plant, Abelmoschus esculentus, used when young as a vegetable or when mature, dried and powdered as a flavouring. Generally about 5 to 10 cm long, green, deeply ridged and full of seeds. They liberate a gelatinous material when cooked unless treated with lemon juice and salt prior to frying. In the Middle East great care is taken not to cut the pod if the release of gelatinous material is not wanted. Grown in most hot areas of the world.
