- masculine A cooked, smooth or coarse meat paste made from a variety of meats, often liver and belly pork or bacon plus flavourings and seasoning. Allowed to cool in the mould then turned out and eaten cold, usually as a hors d’oeuvres. As a rule of thumb there should be equal amounts of lean meat and fat to which are added binders such as eggs, flour, choux pastry or white sauces. Sometimes vegetarian pastes with a similar texture are so called.
