  • A palm tree, Borassus flabellifer, from India, Africa and Asia. Sap is extracted by tapping the unopened male or female flower stalks and immediately boiled down to produce palm sugar or fermented to toddy. Alternatively the fruits (palm nuts) are allowed to grow. Their sap is used as a drink, the soft kernel is also eaten and the germinated nuts produce an enlarged fleshy embryo which is used as a vegetable.
