pigmented grapefruit

  • A comparatively recent development of grapefruit, some varieties having occurred naturally and other having been produced by irradiating seed (e.g. rio red). All are characterized by a red pigmentation of the flesh and in some varieties, of the rind. The pigment is lycopene (as in tomatoes) and is produced by prolonged high temperature. The common variety is ruby but many new varieties are in the process of development.
