  • A rice dish made from finely chopped onions sweated in butter, rice added and sweated 2 minutes, twice the volume of boiling seasoned white or fish stock added with a bouquet garni and all cooked under a cartouche in a 240°C oven for 15 to 20 minutes until cooked. The bouquet garni is removed, the dish seasoned and butter stirred in. Often served with cooked meat, fish or vegetables.
