  • A soft spun curd cheese similar to Mozzarella made from cows’ milk using either a starter of Lactobacillus bulgaricus and Streptococcus thermophilus or citric acid to curdle the milk. Used particularly for pizzas and contains somewhat less water than real Mozzarella, roughly 47 per cent water, 24 per cent fat and 25 per cent protein.
