• A small wild wading bird common in Norfolk but now rarely hunted for the table. There are several varieties of which the lapwing, Vanellus vanellus, the golden plover, Pluvialis apricaria and the grey plover, Pluvialis squatarola, are the most well known. The golden plover is the most sought after. Usually roasted with or without the innards at 220°C and served on buttered toast with lemon and watercress garnish.
