  • A tropical seawater fish, Pampus argenteus, with a silvery skin and tiny black spots, found around and used in India, China and Southeast Asia. It has white flesh similar to, but not as tasty as, that of turbot or sole and is cooked in the same ways. There is also a darker variety with a brownish-grey skin found in Indonesia and the Phillipines with an inferior flavour. The Chinese smoke pomfret over tea leaves.
